Nutty Blackeye Salad

3           cups cooked* or 2 cans (15 oz. each) blackeyes, drained
8           ounces stuffed green olives, sliced
1/2        cup chopped walnuts
1/3        cup chopped onion
1/4        cup minced parsley
Tomato Dressing (recipe follows)

Tomato Dressing
1/3       cup tomato paste
3          tablespoons salad oil
2          tablespoons lemon juice
1/8       teaspoon salt
Dash cayenne pepper

*1 cup dry makes 3 cups cooked.

In a large bowl, combine blackeyes, olives, walnuts, onion and parsley. Gently stir in tomato dressing.

Tomato Dressing
In a small bowl or shaker jar, combine all ingredients and mix well. Makes about 2/3 cup. Makes: 5 cups. Serves 6.
