Lima Beans And Ham

1⁄2        cup chopped onion
1           small clove garlic, minced
2           tablespoons butter or margarine
1           tablespoon flour
3           cups cooked*, drained large lima beans or two 16-oz. cans, drained
1⁄2        pound boneless ham cut into 1-inch cubes
3⁄4        cup thinly sliced carrots
2           tablespoons dry white wine
1⁄4        teaspoon each dry mustard and thyme, crushed
Dash ground allspice
Salt
Buttered Bread Crumbs

Sauté onion and garlic in butter until onion is tender; blend in flour. Combine with beans, ham, carrots, 1 cup water, wine, mustard, thyme and allspice; salt to taste. Place in greased 5-cup baking dish. Bake at 350ºF. 1 hour or until most of liquid is absorbed. Add Buttered Bread Crumbs during last 15 minutes. Let stand 10 to 15 minutes before serving.  Makes 4 servings.

BUTTERED BREAD CRUMBS

Sauté 1 cup bread crumbs in 1 tablespoon butter until crumbs are crisp and golden brown. Makes about 3⁄4 cup.
