Chocolate Beans
8 oz. semi-sweet or milk chocolate
2 cups cooked and cooled large lima beans
Round toothpicks
Break chocolate into 1-inch pieces. Place in a microwave-safe bowl. Microwave on High for 30 seconds; remove and stir. If not completely melted, repeat microwaving. Or, melt chocolate in top of double boiler over simmering water. Cool chocolate slightly.
Blot beans dry with a towel. Pierce each bean with a toothpick and dip into chocolate. Place on waxed paper to harden. Remove toothpick. For a richer taste, give each bean a double dipping. Makes about 8 servings.
