Hummus and Cheese Pizza
14-inch prepared pizza dough or pre-baked pizza crust
1 teaspoon olive oil
1 cup thinly sliced onion (1 medium)
1-1/4 cups Sesame Seed Hummus (recipe follows)
1 cup (4 oz.) shredded Asiago or Parmesan cheese
1/2 cup (3 oz.) crumbled feta cheese
2 cups mixed spring salad greens or arugula
1 tablespoon balsamic or red wine vinegar
HUMMUS
1/4 cup sesame seeds
1 can (15 oz.) garbanzo beans, drain and reserve liquid
3 tablespoons lemon juice
2 tablespoons olive oil
2 green onions, cut in 2-inch lengths
2 cloves garlic
1/4 teaspoon salt
black pepper to taste
Preheat oven to 450ºF. If using pizza dough, bake for 5 minutes before proceeding with recipe.
Heat oil in large skillet. Add onion and cook over medium heat, stirring often, until golden brown, about 10 minutes.
Spread pizza crust with 1 cup hummus. Spoon onion evenly over pizza. Sprinkle with cheeses. Bake pizza 10-12 minutes or until cheese is melted and crust is crisp. Meanwhile, toss greens with balsamic vinegar. Place greens on hot pizza; drizzle with remaining hummus. Cut into wedges and serve immediately.
HUMMUS
Toast sesame seeds in a small skillet over medium-low heat, stirring often, until golden (5-7 minutes). Transfer to a food processor or blender. Add garbanzos, lemon juice, olive oil, green onions, garlic and 5-6 tablespoons of the reserved garbanzo liquid. Process until mixture is smooth and creamy, but still thick enough to hold its shape. Season to taste with salt and pepper. Makes 8 slices.
